Speaking of Frankies and Wraps, did you know Kathi Rolls – in its original form, was a skewer-roasted kebab wrapped in a paratha bread? But over the years this street-food dish originating from Kolkata has known to become the generic name given for any and all kinds of wraps containing a filling enfolded in an Indian flatbread. Frankie, wraps & Kathi Rolls – there’s so much difference between them that you can count. My Recipe Corner
Quick fuss-free snack that is filling and tasty -is a perfect lunchbox item for kids and family. Just be sure to prepare Yogurt and green chutney to spread on chapattis, and top it with a sautéed cottage cheese, onion tomato and capsicum masala then roll & serve wrapped in paper.
- Chop 1 medium green capsicum and keep aside. Cut 1/2 cup Paneer in cubes and keep it in warm water for it to become soft
- Heat oil in a non-stick pan. Slice 1 medium onion, add and sautee until it turns golden brown.
- Add 2 medium tomatoes, turmeric powder and 2 tablespoons ginger-garlic paste to the pan- mix well and sauté till the raw smell of tomatoes and paste goes.
- Add 2-3 tablespoons of tomato puree. Mix well and cook on high heat for a minute.
- Now add capsicum, Paneer cubes, salt, red chilli powder and garam masala powder- Mix them well and cook till they’re done. We don’t want capsicum to become soft
- Okay- now time to prepare the roll – get your chapathi/roti on the station. Mix mint-coriander chutney with yogurt and spread a spoonful of yogurt-chutney evenly on it.
- Place a large spoonful of veggie-paneer filling on one halfside side of the chapathi.
- Sprinkle a few freshly chopped mint leaves, chopped onions and chaat masala on top. Roll the chapatti tightly and stick a toothpick through the center to hold it tight (if needed).
- Wrap them with paper and cut them into halves and serve immediately.

My Improv & Notes
- Use hung curd if possible, to make hung curd, simply tie the curd in a muslin cloth and let it hang for 3-4 hours. The curd will then get rid of all excess water and what you have is the hung curd. It tastes better – try it if you can plan in advance
- Adjust spices and chill powder according to taste
- Firstly, do not over-stuff the Kathi Roll with stuffing, as it will be difficult to roll and eat. You don’t want stuff falling out when taking a bite!
- Furthermore, add vegetables of your choice to make frankie or kathi roll more healthy. You can add freshly chopped Cabbage to make it crunchy and colorful bell peppers too!
- Additionally, leftover chapathi/roti work great to prepare kathi roll
- Finally, grate some cheese to prepare cheesy kathi roll
- Oh- you can add proteins to your Kathi roll – Eggs or Tofu to replace Paneer would also be an alternative!
- You can also use a spread like Guacamole, mayonnaise or green chutney and follow the rest of the recipe
- You can prepare the Roti and filling in advance and prepare the Rolls when ready to serve
- You can also use thin tortilla instead of roti for this recipe, uncooked tortilla work well
