Since I was 16, this is something I have been making and I always use a different cheese combination. Definitely, the white cheddar needs to stay in, but the second cheese can come from whatever you have on hand.

As a bonus, you can ‘southwestern’ it a bit by adding meat protein and some onion, garlic, and jalapeno to the roux. Cooking chicken lightly dusted with cornmeal and then adding a layer of that is always a winner. I tend to use a sharp yellow onion when I do that, as opposed to the white. We also freeze it in individual portions, and it tastes great when defrosted and taken to work.
